St.-Petersburg branch State Research Institute of a Baking Industry specializes in the field of creation of new technologies of baking manufacture.
St.-Petersburg branch includes laboratories:

- of technology both assortment bakery and flour confectionery products,

- of fermentation cultures of microorganisms and analytical researches.

The scientists of branch of institute carry out researches on the following directions:

- selection and picking up of new active strains of pure cultures of lactate bacteria and yeast for bread biological fermentation, dry including;

- perfection of traditional and development of new technologies of rye bread on biological fermentation;

- creation of new technologies and assortments of boiled sorts of bread;

- development of new kinds of products with use of a rye flour : scones, crackers and other untraditional forms;

- technologies and assortment of dietary bakery products for a medical and preventive feed with increased food and biological value;

- technologies and assortment of flour confectionery products :(cakes, gingerbreads, sponge cakes);

- development of complex baking improving blends in technologies of bread with use of a rye flour and for updating baking properties of a wheaten flour.

The experts of branch of institute carry out a technological estimation of the food additives and new kinds of raw material delivered by foreign firms for manufacture of bakery and flour confectionery products.

We possess experience of the international cooperation with the research centers, firms and producing enterprises in a number of the European countries (Finland, France, Yugoslavia etc.).
